For the time being, I think I'm just going to spin up a !trisquel VM on my mac mini and begin establishing services. Probably just going to start with #XMPP and #gnusocial. Once I get some hardware implemented, I'll start hosting my own mail. I don't know that I trust it to #SaaSS.
